Hi everyone I used the latest harvest of the Lime tree to make these bars with a Vodka kick. It’s quick and yummy.

INGREDIENTS:
490 g Flour
2 tsp Baking powder
1/2 tsp Salt
170 g Butter, softened
150 g Granulated sugar
3 Eggs
60 ml Absolut Vodka
Juice and zest of 2 medium sized Limes
DIRECTIONS:
Preheat oven to 180°C. Grease two 9-inch round cake pans. Line with parchment paper, and grease paper.
Whisk together the flour, baking powder, and salt. Set aside.
Beat the butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Mix in the citrus zest and juice.
Add about 1/3 of the flour mixture to the butter mixture, mixing just until combined. Mix in half of the combined juice. Alternate adding the flour mixture and the juice, ending with the flour. Mix just until combined.
Spread evenly and smooth the top. Bake for 25 to 35 minutes, or until a pick inserted into the center comes out clean.
These brownies are as yummy as they are quirky. The pepper and vodka add a welcome kick to the old chocolate and walnut brownies. They are also very easy to make. I haven’t made brownies for awhile and these were definitely the best way to start again. For this post I wanna try something different. Explaining the recipe in pictures and single sentences.

Black Russian Brownies (makes 10-12)
115 g Butter
115 g Dark Chocolate, broken into pieces
1 Tsp Pepper, coarsely ground
4 Eggs
250 g Castor Sugar
1 Tsp Vanilla Extract
3 Tbsp Kahlùa or strongly brewed Coffee
3 Tbsp Vodka (no flavor)
150 g Flour
¼ Tsp Baking Powder
55 g Walnuts, chopped and slightly roasted
Method:
Preheat the oven to 180º C and grease a 30 x 20 cm cake tin. Melt the chocolate, butter and pepper over a low flame and switch off as soon they melt. DO NOT BOIL. Mix and set aside.
Beat together the eggs and sugar. Add in the vanilla essence, vodka and kahlùa to the chocolate mixture and mix it into the eggs.
Sift in the flour and baking powder to the chocolate mixture. Carefully stir in the walnuts.
Pour into the tin and bake for 20-25 minutes or until just firm to the touch. Once cooled cut into squares and enjoy!
