Custard and dark chocolate biscuits

I have been wanting to post this recipe for a very long time but never got to it so here it is with no big write-up, short and sweet. Have a good one!

Custard and Dark Chocolate Biscuits Ingredients

  • 140 g butter, softened
  • 175 g caster sugar
  • 1 egg
  • ½ tsp vanilla extract
  • 225 g self-raising flour
  • 85 g custard powder
  • 85 g dark chocolate, chopped into small chunks

Method

  1. Heat oven to 180 C . Line 2-3 baking sheets with baking parchment. Beat the butter and sugar until light and fluffy. Add the egg and vanilla, and mix well. Sift together the flour and custard powder, then tip into the bowl and mix into a dough.
  2. Roll the dough into balls a little smaller than a walnut, then place on the baking sheets, a little apart to allow for spreading. Press each biscuit down lightly with your fingers.
  3. Bake for 12-15 mins until lightly golden. Remove and cool on a wire rack.
