An assortment of tarts

So,what do you do with 500g of shortcrust pastry dough ? Yes,you experiment! I made 2 tarts this week,all of which are variations of  different recipes seen over time.

1.Capsicum and potato tart:

Choose the amount of Capsicum and Potato mash,cheese according to the amount of pastry and the size of your tart shell.Roughly 1 portion of   pastry dough to 1 portion of Capsicum,mash and Cheese.

Now that’s what I call a neatly chopped Capsicum 🙂

Blind bake the pastry. Chop the Capsicum into thin strips and saute them in a pan with salt and pepper.Make some mashed Potato according to your taste.Fill the shell with the the sauted Capsicum and cover with a layer of the Potato mash and cover with some cheddar.Bake for around 15 minutes on medium heat.

2.Beetroot and caramelized Onion tartlets :

Again choose the amount of beetroot and onion by the amount of pastry and the size of your tart shells.Roughly 1 portion of pastry to 1 and 1/2 portions of Onion and 1/2 a portion of beetroot if you want a thin layer use 1 if you want a fat layer.

Blind bake the pastry.Finely chop the onions and saute them with some salt,sweet paprika and pepper.Grate the beetroot. Put a layer of beetroot and cover with the onion.

I put a thin layer because I’m not a big beetroot fan. BUT  it tasted amazing with the sweetness of the onions.
