Firstly, I would like to say that I got to pick out THREE new cookbooks + an apron,oven gloves etc… So, naturally I was very excited to make something from one of these.My very first time making these delicious treats and almost successfully using a piping bag! So far,every time I use a piping bag something goes wrong.I definitely need some training there. And because of the piping bag disaster series I may have eaten some of the batter (only while cleaning the mess up) .This recipe is from my new book called “delicious treats”. My first three trays had no volume to them probably because i added too much buttermilk BUT it still tasted awesome. No matter how flat they turn out, they taste soft on the outside and the filing and topping are so smooth….YUM!
After this I added some flour to it and they started to have some shape.I know some of them are too big and some are too small.Ultimately,they taste good and they look okay.I think I did an okay job but there’s always room for improvement. 🙂
Here’s the recipe:
For the biscuits :
70 g of butter,softened
125 g of light muscadavo sugar
1 tsp vanilla extract
125 g plain flour(tip: you may need some extra flour)
1/2 tsp bicarbonate of soda
40 g cocoa powder
150 ml buttermilk
200 g milk 0r dark chocolate,roughly chopped
140 g butter,softened
85 g icing sugar
70 g chocolate according to your liking,i used dark
chocolate sprinkles again according to your preference,i used white.
1.Preheat the oven to 200 C.Line 2 to three baking trays(depending on the size)with baking paper.Put the butter,light muscadavo sugar,egg and vanilla extract in a mixing bowl and beat together until pale and thick.
2.Sift the flour,bicarbonate of soda and cocoa powder into a separate mixing bowl and stir to combine.Add half the buttermilk and half the flour mixture to the butter mixture.Stir to combine.Once combined,add the remaining flour and buttermilk (TIP:add the buttermilk a little bit,stir check the consistency.Then,if needed add more)and carefully stir again.
3.Put the mixture into a large piping bag fitted with a 1/2 inch plain nozzle.Pipe small blobs about 5 cm apart to allow for expansion.
4.Bake in the preheated oven for 10 minutes,or until just risen and just firm to touch.Leave on a wire rack to cool for 5 minutes.
5.For the filling,melt the chocolate in a double-boiler.Leave to cool slightly(TIP:I slightly tampered the chocolate which made it smoother).Put the butter and icing sugar in a mixing bowl and beat until light and fluffy.Stir in the melted chocolate into the butter mixture until evenly combined.
6. Sand-which the whoopie pies together in pairs with the filling.Melt the chocolate over a double – boiler and drizzle over the top.Decorate with some chocolate sprinkles.Leave in a cool place to firm up for a couple of hours.
